  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • Fresh cilantro, chopped, for garnish (optional)
  • Sliced green onions, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the stuffed shells.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat if needed.
  3. Stir in the taco seasoning and cook according to the packet instructions.
