- 1 cup carrots diced
- 1 cup green beans cut into 1″ pieces
- 2 bell peppers chopped
- 28 ounces diced tomatoes low sodium (undrained), 1 large can
- 6 cups beef broth low sodium
- 2 Tablespoons tomato paste
- ½ teaspoon thyme leaves
- ½ teaspoon dried basil
- ½ teaspoon oregano
- ½ teaspoon pepper or to taste
- 2 cups broccoli florets
- 2 cups zucchini sliced
