It’s a delicious, light and refreshing dessert. It is low in calories and sugar and can be made with the low-fat pie filling of any flavour. Note that it should be prepared the day before to soften the graham crackers.

Low-fat graham crackers
8 oz fat-free cream cheese (softened)
1 cup cold skim milk
2 tbsp. lemon juice
1 small can of instant vanilla pudding (sugar-free)
8 oz. Fat Free Cool Whip
1 can of low-fat cherry pie filling (or any other flavour)
Line the bottom of a 9 x 13 pan with whole graham crackers. Beat the cream cheese until smooth. Add milk and lemon juice to the cream cheese and beat until smooth. Stir in the pudding mix, then stir in the Cool Whip.
Spread half of the cream cheese mixture over the graham crackers. Repeat with another layer of graham crackers and cream cheese mixture. Spread pie filling on top.
Refrigerate overnight to soften graham crackers. Enjoy 🙂
