BACON CHEESEBURGER TWICE BAKED IDAHO POTATOES

These bacon cheeseburgers with twice-baked Idaho potatoes are full and flavorful! It’s so easy to get into the food routine. Today I am sharing this creative and delicious recipe that my family went crazy for!

INGREDIENTS

4 Idaho baked potatoes
1/2 cup of melted butter
1 cup of sour cream
1 1/3 cup grated Colby-Jack cheese, divided use
1/2 teaspoon kosher salt
1/2 teaspoon of granulated garlic
1/4 teaspoon freshly ground pepper
1 pound of cooked ground beef (I seasoned mine with 1/2 teaspoon salt, 1/4 teaspoon garlic)
1/2 cup of barbecue sauce
6 slices of bacon, cooked and shredded
2 green onions, sliced

INSTRUCTIONS

Preheat the oven to 400° F.
Rub potatoes until clean and dry.
Place them on a baking sheet and bake for one hour or until the potatoes are well cooked.
Remove them from the oven and place them on a wire rack to cool slightly.
Lower the oven temperature to 375° F.
Cut the potatoes 3/4 of the way through, leaving them stuck at the bottom. Scrape the inside of the potatoes with a spoon in a large mixing bowl. Add butter, sour cream, 1 cup cheese, garlic, salt and pepper. Mix or beat them with an electric mixer, depending on the desired texture.
Place the filling on the potato skins and place it on a baking tray.
Mix the ground meat with the barbecue sauce and place it equally on the potatoes. Sprinkle each potato with the remaining cheese, bacon and green onions.
Bake for 20 to 25 minutes or until potatoes are hot and cheese is melted.
