1/2 cup of soft butter
1 cup of peanut butter
1 cup of brown sugar
2 teaspoons vanilla extract
1 1/4 cup all-purpose flour
1 cup of old-fashioned oatmeal
1 teaspoon baking soda
1/4 cup sugar to roll up
Preheat the oven to 375°F.
Add butter, peanut butter and brown sugar to bowl and stir to combine.
Then add the egg and vanilla, stirring until combined.
Add the flour, oatmeal and baking soda, mixing well.
Pour 1/4 cup of sugar into a small bowl.
Use a cookie spoon to form 1 1/4 inch dough balls.
Roll sugar and place 2 inches apart on a greased or lined baking sheet.
Crush the cookies with a fork in the shape of a cross.
Bake for 10-12 minutes or until edges are lightly browned.
Cool cookies on a wire rack.
Store cooled cookies in an airtight container for up to 5 days.
