Almond Joy Cookies

If you like coconut, kid, you’re in for a treat today! These almond joy cookies only need four ingredients and don’t require a blender! No banging, no cooling, just mixing and baking EASY! You’ll love these fabulous sticky cookies!

I have a great lover of coconuts in my life, my father. He loves all things coconut: coconut cream pie, coconut macaroons, magic coconut raspberry bars and especially these easy almond joy cookies. These cookies are very easy to make and bake to perfection.

So no flour, no eggs, no butter… what the hell is in these cookies that you’re asking? Chocolate chips, coconut, almonds, and sweetened condensed milk – that’s it! I put the cookies on a parchment lined cookie sheet and leave them there for 12 or 14 minutes. When the bottom starts to look golden brown and the coconut seems to have brown tips, it’s time to come out!

After I scooped out the cookies, I wet my fingertips and patted the disc-shaped cookies. The cookies are the same shape when they go in and when they come out, so it’s up to you.

Ingredients

1 cup of butter
1 1/2 cups of white sugar
1 1/2 cups of brown sugar
4 eggs
3 teaspoons vanilla
4 1/2 cups of flour
2 teaspoons baking soda
1 teaspoon of salt
5 cups of chocolate chips
2 cups of sweetened coconut
2 cups of chopped almonds

Preheat the oven to 375°F. Lightly grease the cookies.
Combine dry ingredients, and set aside.
In a large bowl, spread butter and sugars. Beat the eggs, one at a time, add the vanilla. Add the dry ingredients until well mixed, then add the chocolate chips, coconut and almonds. Put the tablespoons of soup in the prepared cookie sheets.
Bake for 8 to 10 minutes. Cool on the baking sheet for 5 minutes before placing on a wire rack to cool completely.
