Apple Butter Cake

INSTRUCTIONS

CAKE
Preheat oven to 350°F. Spray 2.8-inch round baking pans with nonstick cooking spray and cover each with parchment paper.
In a large bowl, whisk together butter, milk, apple butter, granulated sugar and brown sugar.
Beat in eggs and vanilla until smooth.
Add flour, baking soda and apple pie spice. Whisk until the mixture is smooth.
Pour the batter evenly into the prepared round baking pans. Bake in the oven for 16 minutes. Cakes are baked when a clean toothpick is inserted and comes out clean without moist batter. The tops should also be elastic.
Remove from the oven and allow to cool while you make the icing.

FREEZING
In the bowl of a stand mixer (or with a hand mixer), beat butter until soft.
Add powdered sugar, vanilla, cinnamon and apple cider. Whisk until the mixture is smooth and homogeneous.
Frost the cooled cake and serve.
