Apple Cider Cupcakes with Salted Caramel Frosting

Apple cider muffins with salted caramel icing is the perfect and simple dessert recipe to celebrate the fall season.


a box of vanilla cake mix
ingredients for preparing the boxed cake mix
5 packs of spiced apple cider drink mix

1 1/2 cups of candy cubes.
1 container of vanilla icing
1/2 to 1 teaspoon of salt as you go…
powdered sugar as needed


Add the apple cider drink mix to the cake mix and prepare the cupcakes according to the instructions on the package.
Allow to cool completely before glazing.

Melt the caramel candies in the microwave (cook in 20-second increments and stir between them, until melted), should give about 1 cup when melted.
In a bowl, combine vanilla glaze and melted caramel. Add salt. Mix well and refrigerate for at least 10 – 15 minutes, until the glaze is cool enough to hold its shape.
If the icing is still too liquid, add powdered sugar in small increments until the desired consistency is achieved.
Frost the muffins and enjoy!
