Apple Pie French Toast Roll Ups

Apple pie, French toast, perfect breakfast or snack. Tasty apple pie filling rolled up into a slice of bread, fried until golden brown and covered with a mixture of cinnamon and sugar.

Ingredients

10-12 slices of toast
4 oz cream cheese at room temperature
2 eggs
3 tablespoons of milk
1/3 cup of sugar
1 teaspoon of ground cinnamon
2 tablespoons of butter for cooking, more if necessary.

    2 tablespoons of butter
    3-4 medium apples peeled without core and cut into 1/4 inch cubes.
    1/3 cup of brown sugar
    3 tablespoons of water
    1 teaspoon cinnamon
    1/8 teaspoon nutmeg
    1 tablespoon + 1 teaspoon cornstarch
    2 tablespoons of water
  • for the canned apple filling option
    1 can of apple pie filling

Instructions

In a medium sized pan, melt the butter, add apples, spices, brown sugar and 3 tablespoons of water. Cook over medium-high heat for 4-6 minutes or until apples are very slightly tender.
In a small dish combine the cornstarch and 2 tablespoons of water. Add to the pan while stirring and continue cooking until the apples are tender, and the filling thickens, about 4-5 minutes. Cool.
In a bowl combine the sugar with the cinnamon and set aside. In another bowl, beat the eggs with the milk and set aside.
Remove the crust from the bread and flatten the slices with a rolling pin. Spread the cream cheese evenly on each slice of bread.
Add 1 or 2 teaspoons of the apple filling along one of the edges of the bread, to roll them up.
Gently but firmly roll the bread around the apple filling. Continue with the remaining bread.
Heat a non-stick pan over medium heat and melt about 1 tablespoon of butter. Cover the bread rolls with the egg mixture and place the seam side down. Cook 3 or 4 rolls at a time.
When golden brown, turn a quarter turn and continue until all sides are cooked and well browned. Lightly wipe the pan with a paper towel and repeat until all rolls are cooked.
Roll in the sugar-cinnamon mixture. Serve hot and dip in maple syrup if desired.
