2 teaspoons of vegetable oil
2 cloves garlic – chopped
1/2 onion – chopped
1 bag (12 ounces) frozen broccoli – thawed
3/4 cup panko in breadcrumbs
1/2 cup strong cheddar cheese
1/3 cup Parmesan cheese
2 eggs – beaten
preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil.
Heat the oil in a small skillet over medium heat, add the garlic and onions. Season with salt/pepper to taste. Sauté until the onions are tender, then set aside the garlic to cool.
Add the broccoli to a kitchen towel. Wrap the tea towel around the broccoli and squeeze out excess moisture. Pour the drained broccoli into a large bowl.
In the same bowl, add the panko, cheese, eggs and salt/pepper to taste.
Mix everything together to form patties and place them on the prepared baking sheet.
Bake in the preheated oven for 15 minutes. Turn over and bake for another 15 minutes or until golden and crispy.
