Banana Pudding Dessert

This fresh and creamy Banana Pudding Dessert is simple to prepare and ‘oh so delicious! Make it in a square pan or easily double up for a 9×13 dessert and get ready to be the talk of the town!

INGREDIENTS

1 c vanilla wafer crumbs (or graham cracker crumbs)
2 tablespoons of sugar
2 tablespoons of melted butter
8 oz of cream cheese
1 c powdered sugar
1 8 oz tub of defrosted whipped cream; divided
2 large bananas
2 c milk
4 egg yolks
2/3 c sugar
1/4 c corn starch
1/8 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons of butter
1/2 cup vanilla wafers or graham crackers
banana for garnish, if desired.

INSTRUCTIONS

Bark
Combine the vanilla wafer crumbs (or graham cracker crumbs) with the sugar and melted butter. Press into the bottom of a pot. (8×8, 9×9, or 8×11 will work!) Set it aside.

Layer of cream cheese
In a stand mixer, beat the cream cheese for 30 seconds or until smooth.
Add the powdered sugar and one cup of the whipped cream (save the rest for the top layer!); blend until smooth.
Put the mixture on the crust layer (many small spoonfuls will work better!). Spread it carefully until it is smooth.
Cut the two bananas and place them on top of the cream cheese mixture.

Pudding Layer
Add milk, egg yolks, sugar, corn starch and salt in a large microwaveable glass bowl. Use a whisk to mix vigorously for 30 seconds.
Microwave on HIGH for 5-7 minutes, stirring well after each minute.
After 4 minutes, beat every 30 seconds.
Once it starts to thicken, be sure to whisk vigorously to soften.
Once it is as thick as a pudding should be, it is ready to cook.
Add the vanilla and butter, until the butter is completely melted.
Press the plastic over the surface to prevent a skin from forming. Let it cool in the fridge (or in an ice bath if you are in a hurry!).
Once the pudding has cooled, spread it over the layer of cream cheese and the banana layer.
Place the vanilla wafers (or the graham crackers) on the pudding and return it to the refrigerator.

Whipped topping and garnishes
Spread the rest of the beaten cover over the wafers.
When ready to serve, sprinkle a chopped banana and crushed wafers (or graham crackers) on top!
