Unbelievable! I looked back at all my posts from my early days of blogging and saw a very surprising fact for me. Among the 45 recipes I’ve posted so far, there are no muffin recipes!
Ingredients
For the blueberry muffins:
2 cups of all-purpose flour
3 teaspoons of baking powder
1/2 teaspoon of salt
2 large (or 3 small) eggs
1 cup of granulated sugar
1 cup of yogurt
1/2 cup canola oil
1 teaspoon vanilla extract
2 1/3 cups fresh or frozen blueberries (thawed), divided (1 cup goes in the batter and 1 1/3 cup for the topping)
1-2 tablespoons of flour
For Streusel Topping:
1 cup all-purpose flour
2/3 cup of granulated sugar
1 bar of melted salted butter
1 teaspoon cinnamon
