This slow-cooked cabbage soup is the perfect healthy meal, low in fat and calories, low in carbohydrates and full of vegetables. It is so easy to make in the electric pot and is perfect for meal preparation!
5 carrots, chopped
3 onions, chopped
2 cans (16 oz.) of whole peeled tomatoes, with liquid
1 large cabbage, chopped
1 (1 ounce) envelope of dry onion soup mix
1 (15 ounces) can cut green beans, drained
2 quarts of tomato juice
2 green peppers, cut into cubes
10 celery stalks, chopped
1 can of beef broth
How to do it
Place the carrots, onions, tomatoes, cabbage, green beans, peppers and celery in a large pot. Add the onion soup mixture, tomato juice, meat broth and enough water to cover the vegetables. Simmer until vegetables are tender. Can be stored in the refrigerator for several days.
