For the bars:
1 cup of butter, softened
2 cup of granulated sugar
1 teaspoon of salt
4 large eggs
2 teaspoons vanilla extract
3 1/2 cups of all-purpose flour
1 teaspoon of baking powder
2 cans (21 oz.) of cherry pie filling
For the Glaze:
1 cup of confectioner’s sugar
3 tablespoons of milk
HOW TO DO IT:
Preheat oven to 350 degrees F. Line a 9×13 inch baking sheet with aluminum foil or parchment paper. Spray with a non-stick spray. Set aside.
In the bowl, spread the butter and sugar, about 1-2 minutes. Add salt, eggs and vanilla and continue to stir until completely incorporated. Add the flour and baking powder and mix until well combined. Set aside 1 1/4 cups of dough. Press remaining dough into prepared baking pan. Cover with cherry pie filling. Drop remaining dough (1 1/4 cups) in small pieces over cherry filling.
Place in oven and bake for 50-60 minutes or until golden brown. Remove from oven and place on wire rack to cool completely. Once cooled, prepare the glaze. Beat the confectioners’ sugar and milk until smooth and sprinkle over the bars. Cut into squares and serve.
