The Chicken and Bacon Ranchero Pasta Salad is a refreshingly creamy cold pasta salad that is filled with shredded chicken, vegetables and crisp bacon seasoned with dry ranchero seasoning mix.
1/2 cup of sour cream
1/2 cup of mayonnaise
1/4 cup of whole milk
3 tablespoons (1 package) dry ranch seasoning
1/4 cup chives, chopped
1/4 teaspoon salt, or to taste
1/4 teaspoon pepper, or to taste
1 box (16 ounces) of Gemelli pasta, cooked al dente and completely cooled
3 cups of roasted chicken, shredded and chilled
12 slices of bacon, chopped and cooked crisp
2 cups of cherry tomatoes, cut in quarters
1 can (15.25 ounces) of corn kernels
1/4 cup red onion
1/4 cup green bell pepper, diced
In a large bowl combine sour cream, mayonnaise, milk, ranch dressing, chives, salt and pepper. Mix well.
Add the cold noodles, chicken, bacon, tomatoes, corn, red onion and green bell pepper. Mix, taking care to cover everything well. (All ingredients should be cold).
