Cilantro Lime Chicken

Marinated and grilled, this Cilantro-Lime Chicken is juicy and full of flavor!

Ingredients

▢2 lbs boneless chicken thighs or breasts
▢1 lime to serve

Marinade
▢2 tablespoons fresh lemon juice
▢1/4 cup fresh cilantro, chopped and extra for garnish
▢1 1/2 tablespoons of honey
▢2 chopped garlic cloves
▢1 teaspoon cumin
▢1 teaspoon chili powder
▢1 tablespoon of olive oil
▢3/4 teaspoon kosher salt
▢1/2 teaspoon black pepper

Instructions

Combine all the ingredients of the marinade in a small bowl.
Pour marinade over chicken and marinate 30 minutes to 2 hours.

Grilled
Preheat the grill to medium-high heat.
Cook chicken on a grill with oil for 7-8 minutes. Turn over and cook 7-8 minutes more or until chicken reaches 165°F.
Rest 5 minutes before serving. Serve with lime slices and additional chopped cilantro.

For baking
Preheat the oven to 400°F.
Place chicken on baking sheet and bake 20-25 minutes or until chicken reaches 165°F.
Rest 5 minutes before serving. Serve with lime slices and additional chopped cilantro.

Recipe Notes

The marinade can also be pressed in a blender a couple of times if you prefer.
Allow the chicken to marinate for at least 30 minutes.
Fresh lime is best in this recipe, the taste of bottled lime can be bitter.
Due to the high amount of citrus in this recipe, do not marinate for more than 2 hours.
This marinade can be used to cook bone-in chicken breasts or thighs.
Optional additions: add 1 teaspoon of chili powder and/or 1/4 teaspoon of ground red bell pepper to the marinade to add a little heat.

To roast the chicken
Place it on a rack or in a tray lined with aluminum foil.
Grill chicken 4 inches from the item for 5-6 minutes on each side.

To cook bone-in chicken thighs or breasts
Preheat oven to 425°F.
Add chicken skin side down (reserve marinade) and cook 3-4 minutes or until golden brown. Turn and cook 2 more minutes.
Add the rest of the marinade to the pan. Bake 25-27 minutes or until chicken reaches 165°F. Grill 2-3 minutes for crispness if desired.
