CINNAMON CREAM CHEESE COOKIES

Cinnamon cream cheese cookies are a deliciously soft and fluffy cookie covered with cinnamon sugar. Serve these cookies for a light dessert, like a Christmas cookie, for a party or shower, or just to enjoy with a cup of tea in the afternoon.

INGREDIENTS

1/2 cup (1 stick) softened butter
4 ounces of softened cream cheese
1 1/2 cups of powdered sugar
1 egg
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 3/4 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon of ground cinnamon

INSTRUCTIONS

In a large mixing bowl, use an electric mixer to spread the butter and cream cheese until light and fluffy. Add the powdered sugar and mix at low speed until combined.
Add the egg, baking powder and vanilla extract and mix only until combined.
Mix the flour, only until incorporated. Cover bowl with plastic wrap and place in refrigerator to cool dough for 1 hour.
Heat the oven to 375ºF. Line cookie sheets with parchment paper.
Place cookie dough into 1-inch dough balls and roll between your hands to create smooth dough balls. In a small bowl, combine granulated sugar and cinnamon. Roll each ball of dough in the cinnamon-sugar mixture and place it on the prepared cookie sheets, leaving at least one inch of space between each.
Bake at 375ºF for 7-8 minutes, just until ready. Do not over-bake.
Remove the cookies from the tray and let them cool on a wire rack.
