Classic Wedge Salad

Instructions

Combine dressing ingredients in a bowl; mix with a hand blender. Taste and add salt and pepper as needed. Chill until ready to serve.
Build the salad by placing a wedge of lettuce on each of the 8 plates. Sprinkle equal amounts of dressing on each piece of lettuce.
Spread tomatoes, bacon and blue cheese over each salad, and garnish with fresh parsley.

Recipe Notes

The Blue Cheese Dressing can be replaced by the home ranch.
To prepare the lettuce, cut the head into quarters leaving the core intact to keep the leaves together.
Carefully separate the leaves and rinse them well. Dry with paper towels. Place it upside down so that excess water can flow out before serving it.
Cut each quarter in half (for 8 wedges). Cut the core just before serving.
