Copycat McDonald’s Apple Pies

McDonald’s apple pie imitators are crunchy, flaky, buttery mini pies filled with fresh, sweet and sour apples and cinnamon. These homemade versions of the famous McDonald’s apple pies are absolutely irresistible. These are my favorites, as are my apple pie cookies and caramel apple pie bombs.

Ingredients

2 sheets of Pastry-thawed Puff
3 cups of apples – peeled and cut into 1/3-diameter cubes-½ ich (about 4 large apples)
3 tablespoons of sugar
3 tablespoons of light brown sugar
1 ½ teaspoons cinnamon
½ teaspoon of nutmeg
1 tablespoon of fresh lemon juice
¼ cup of water
2 tablespoons of corn starch dissolved in 2 tablespoons of cold water
1 beaten egg with 1 tablespoon of cold water
3 tablespoons of light brown sugar
¾ teaspoon cinnamon

Instructions

First, make the filling for the apple pie. In a large pan, stir together the chopped apples, sugar, brown sugar, cinnamon, nutmeg, lemon juice and water. Cook over medium heat for 10 minutes, stirring occasionally. Add the corn starch dissolved in ¼ cup of water and cook for 3-4 minutes until thickened. Remove from heat and set aside to cool completely.
Preheat oven to 400 F and line 2 baking sheets with parchment paper, then set aside.
Stir in the cinnamon and 3 tablespoons of light brown sugar, and set aside.
Beat an egg with a spoonful of cold water and set it aside.
Unfold the thawed puff pastry and spread it over a lightly floured surface in a 12×12 inch square. Cut into 8 (3×6 inch) rectangles.
Arrange 4 rectangles on a baking tray. Spoon a generous mound of apple pie filling into each rectangle leaving a border of ½ inches without the filling. Brush the edge with washed egg. Cover with the remaining four puff pastry rectangles. You will need to stretch the dough gently with your hands so that you can cover the mound of filling and match the edges. Press the edges with your fork. With a sharp knife cut 4 slits in the top of each cake. Brush with washed egg and sprinkle with cinnamon sugar.
Repeat the process with the rest of the puff pastry sheet. Bake until golden brown for 18-20 minutes.
