One of our favorite sauces is Cheddar Bacon Ranch, or what I call “Crack”. I usually only do it during the football season because it’s VERY addictive. I only did it once this football season and I forgot to take it to the back door. I left it in my parents’ fridge! I was devastated!
I took a dip in the house and started thinking about what to do with it, besides eating it all myself. I decided to mix the sauce in a big bag of frozen chips. The result? A fantastic potato casserole! We love this! Chicken Legs orders this all the time. I divided the potatoes into 3 disposable foil trays and froze them so we always have potatoes when we need them. We just finished the last pan, so I guess I have to add this to my shopping list this week.
2 (16oz) containers of sour cream
2 cups cheddar cheese, grated
2 bags of real bacon bits
2 packs of ranch dressing mix
1 large (28 – 30oz) bag of frozen hash brown potatoes – shredded
Combine the first 4 ingredients, mix in the chips. Sprinkle in a 9×13 mold.
Bake at 400 for 45-60 minutes.
