This salad is a perfect dessert for Thanksgiving dinner or New Year’s Eve party. Cranberry and Cheesecake Salad is quick, simple and easy to prepare ♥
INGREDIENTS
2 cup fresh blueberries
1 cup of granulated sugar
2/3 cup nuts, chopped
1 cup crushed pineapple, drained
8 oz of cream cheese
2 cup heavy whipped cream
2 cups of mini marshmallows
INSTRUCTIONS
Put the blueberries in the food processor and chop them.
Add a cup of sugar to ½ and mix well.
Cover and leave in the refrigerator for at least 1 hour, possibly overnight.
Remove from the fridge, add the pineapple and nuts and stir.
In a large plate, combine the cream cheese with ½ a cup of sugar and beat until creamy.
Add the heavy whipped cream and mix until well combined and firm.
Fold the blueberries and mix well. Finally, gently mix the mini marshmallows.
Cover and leave in the fridge for 3-4 hours.
NOTES
Serve cold. It is better to use it the same day.
