CREAMY JELLO YOGURT FLUFF

This easy and creamy gelatin yogurt sponge is a new favorite in our house. Low in calories with Zero Weight Watchers’ SmartPoints in the Blue and Purple plans, it’s hard to beat when looking for a guilt-free, low-calorie treat.

Ingredients

3/4 cup boiling water
1 package of sugar-free gelatin (4 servings)
1/2 cup of cold water
ice cubes
1 cup of nonfat yogurt (plain or Greek)

Instructions

Pour the boiling water into the blender. Add the gelatin.
Cover the blender and blend at low speed until the gelatin is completely dissolved, about 30 seconds.
Combine cold water and ice cubes to make 1-1/4 cups. Add to gelatin in blender and stir until ice is partially melted.
Add the yogurt. Cover and whisk at high speed for 30 to 45 seconds.
Divide the mixture evenly among 5 dessert glasses, bowls or ramekins. Refrigerate until ready, about 30 minutes.

Recipe Notes

Any sugar-free gelatin flavor will work. Our favorites are orange, strawberry, and raspberry.
Experiment by adding and/or covering your yogurt lint with different fruits – strawberries, blueberries, raspberries, peaches, canned pineapple, chopped apples, pears, etc.
You can use plain nonfat yoghurt or plain nonfat Greek yoghurt. You can also substitute yogurt with cottage cheese if you prefer.
The instructions suggest making your lint in the blender. If you prefer, you can use a wire whisk and a bowl or an electric mixer instead.
