Creamy Slow Cooker Chicken Stroganoff

This delicious slow-cooked chicken stroganoff is the perfect meal to feed a crowd. It’s super easy to make, so it’s ideal for anyone with a busy lifestyle.

Ingredients

500 g chicken thigh, cut into cubes
1 onion, diced
2 tsp. garlic, crushed
500 g mushrooms, sliced
1 tablespoon of sweet paprika
1 tablespoon of tomato paste
1 tablespoon Worcestershire sauce
1 cup chicken broth
4 tablespoons of sour cream
2 tablespoons of cornstarch
Salt and pepper

Instructions

In a slow cooker, add the chicken, paprika, onion, garlic, mushrooms, tomato paste, Worcestershire sauce and chicken broth.
Simmer for 6-8 hours, or cook over high heat for 4 hours.
Finally, combine the sour cream and the cornstarch and mix. Allow cooking for another 15 minutes.
Season with salt and pepper.
Serve and enjoy
Recipe tips
You can use chicken breast instead of thigh. Both will work fine, just a personal preference.
If you are cooking the pasta in the slow cooker, do not add the cornstarch, as the starch in the pasta will thicken the sauce more than enough.
You can add some green vegetables if you wish, just make sure it is done towards the end of the cooking as most vegetables only need 15-30 minutes of cooking time.

Note: I use a 5.5 liter (6 quarts) slow cooker for all the recipes I have on this website unless specified. If you have a smaller or larger crockpot, then you may need to adjust the ingredients.
