Crustless Spinach, Onion and Feta Quiche


1 medium onion, chopped
6 ounces of fresh baby express spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all-purpose flour
1/2 teaspoon baking powder
pinch of cayenne
1 1/3 cups fat-free milk
1/2 cup feta cheese


Preheat the oven to 400F.
Lightly grease a 10-inch quiche pan (or pie plate)
In a medium skillet, cook the diced onion with a little vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add fresh spinach and cook until wilted. Let cool for a few minutes
In a large mixing bowl, beat the eggs, flour and baking powder. Beat the milk and then add the spinach and onion mixture.
Pour the base of the quiche into the prepared pan. Cover with feta cheese.
Bake for 25 minutes, or until center is set and outer edge is golden brown.
Let stand for 5 minutes, then slice and serve.
