EASY BREAKFAST BURRITOS (FREEZER FRIENDLY!)

Breakfast burritos are the perfect breakfast! Loaded with potatoes, eggs and ham, bacon or sausage, these breakfast burritos are the best way to start the day! Double the amount and freeze to save time on busy mornings!

Ingredients

1 pound of breakfast sausage
1 pound of bacon
1 cup of chopped ham
2 pounds of red potatoes cut into bite-sized pieces.
16 ounces of cheese of the type you want
24 soft taco tortillas. I used flour.
12 extra large eggs
1/2 cup of milk
1/3 cup of olive oil
1 teaspoon Emeril’s Seasoning Salt or your choice of seasoning
salt and pepper

Instructions

Meat:
Bake the bacon, the brown sausage, fry the ham

Baked red potatoes:
Preheat the oven to 450.
Dry the cubed potatoes with a towel to remove extra water.
Mix the potatoes with 1/3 c of olive oil, 1 teaspoon of salt, 1/2 teaspoon of pepper. Use additional seasonings (such as Emeril’s or Seasoning Salt) if desired.
Roast for 30 minutes until golden brown. Begin to check after 20 minutes.

Scrambled eggs:
Beat 12 eggs and 1/2 c of milk in a bowl until well combined.
Heat a large skillet with nonstick cooking spray (or melt 1 tablespoon of butter) over medium heat.
Spray skillet and add egg mixture.
Cook the eggs, stirring occasionally until the eggs are set.
Season with salt and pepper to taste.
Tortillas
Place 5-10 tortillas on a plate. Cover with a damp paper towel.
Heat them in the microwave for 30 seconds at 50% power. Heat the tortillas in batches.

Put everything together:
Set up an assembly line with all the ingredients.
Place the tortillas on a large baking sheet or cutting board.

Assembling burritos
Build your burritos – cheese, eggs, potatoes, meat.
Fold the sides of the tortilla and roll up the burrito.
Pat the top of the burrito firmly making sure the seam is at the bottom.
Make sure the burrito is well rolled up.

Frozen burritos
Line a baking sheet with parchment paper.
Place the burritos on the sheet, with the seam facing down.
Press the burritos back in slightly, making sure the edges are tucked in.
Place the baking sheet in the freezer for one hour to freeze the burritos.
Take them out of the freezer and wrap the burritos individually in plastic.
Place them in a ziploc bag. Finish with 24 burritos.

To warm up the burritos:
Remove the plastic wrap.
Wrap the burrito in a damp paper towel.
Heat for 3 minutes at 50% power.
Serve with fresh salsa – yummy!

Notes

Tips: Do you want to be a vegetarian? Substitute sautéed peppers and onions for meats. Want bigger burritos? Just use bigger tortillas. Need more flavor? Add some stir-fried vegetables. Be sure to serve with fresh salsa.
