Creamy peanut butter balls dipped in chocolate are the perfect gift.
Ingredients
1 ½ cups of peanut butter
½ cup softened butter
½ teaspoon vanilla
4 cups of powdered sugar
3 cups of semi-sweet chocolate chips
1 tablespoon of vegetable shortening or coconut oil
Instructions
Combine peanut butter, butter and vanilla with a blender halfway through until fluffy.
Mix the powdered sugar a little at a time until it is incorporated. Cool the mixture for 30 minutes.
Roll into balls and place them in a parchment lined tray. Cool the mixture for 30 minutes.
Combine chocolate chips and vegetable shortening in a small bowl. Heat in microwave on 50% power for 1 minute. Stir and continue to microwave in 30 second increments until melted.
Place a toothpick in each peanut butter ball and dip in the chocolate leaving some of the peanut butter sticking out of the top.
Place them on a parchment lined tray and let them cool.
Notes
Do not use natural peanut butter in this recipe.
