Ingredients of the Yum Yum sauce
1 cup of mayonnaise
¼ cup of water
¼ ketchup cup
2 tablespoons of sugar
½ teaspoon garlic powder
½ teaspoon of paprika
½ teaspoon salt
1/8 teaspoon ginger
1/8 teaspoon onion powder
Ingredients of chicken fried rice
2 tablespoons of sesame oil or vegetable oil
½ cup of chopped onion
½ cup diced carrots
½ cup frozen peas no need to defrost
3 cups of cooked white rice
2 cups of cooked shredded chicken
½ cup soy sauce
1 tablespoon of butter
Salt and pepper to taste
Directions to Yum Yum sauce:
In a small bowl, beat all ingredients until well combined.
Cover the bowl with a lid or plastic wrap, then refrigerate for at least 1 hour.
After refrigerating the sauce, stir well before serving.
Chicken fried rice Instructions:
Heat a large skillet or wok over medium heat. Add sesame oil, onions and carrots; sauté until carrots and onions are tender.
Add the peas to the pan and stir well.
In a small bowl, beat the eggs with a fork. Push the vegetable mixture to one side of the pan, and then pour the eggs into the other side of the pan. Use a spatula to scramble the eggs. Once the eggs are completely cooked, mix them with the vegetables.
Add the rice and chicken; mix well.
Add the soy sauce and then stir in the fried rice
Add the butter and stir the rice until the butter melts
Season the fried rice with salt and pepper if desired.
Serve hot with the “yum-yum sauce”.
