Crunchy on the outside and fluffy on the inside, baked potatoes are an easy accompaniment to almost any meal.
Ingredients
▢2 pounds of red or yellow skinned potatoes
▢2 tablespoons of olive oil
▢1 teaspoon garlic powder
▢3 tablespoons of fresh chopped herbs (rosemary, parsley, thyme, basil)
▢1/2 teaspoon of paprika
▢to try the coarse salt and pepper
Instructions
Preheat oven to 425°F.
Rub the potatoes (do not peel them). Cut into 1″ cubes.
If time permits, soak potatoes in cold water for up to 1 hour. (This removes the starch and makes the potato fluffier). Drain and dry the potatoes, if necessary.
Mix the potatoes, olive oil, herbs and seasonings
Place on a baking sheet and bake for 30-35 minutes until golden and tender.
Recipe Notes
Use any combination of herbs you like. Dried spices/ herbs can be substituted, use 1-2 teaspoons of dried herbs instead of fresh ones.
Any type of potato will work in this recipe and peeling is optional.
