This “Easy Rocky Road Fudge” is made in a few minutes and is loaded with chocolate, marshmallows and chopped nuts. Once you make this delicious microwaveable fudge, you’ll never use another recipe or method again. This is a preservative!
INGREDIENTS
2 cups of semi-sweet chocolate chips
A 14-ounce can of sweetened condensed milk
1/2 teaspoon vanilla extract
2 1/2 cups of miniature marshmallows
1 cup of chopped nuts, peanuts, almonds or walnuts
INSTRUCTIONS
Line a 9″13″ or 8 “x8” pan (for a thicker candy) with aluminum foil; cover with cooking spray.
Place chocolate chips and condensed milk in a large microwave-safe container. Microwave for 1 minute on high power and then stir. If the snacks are not completely melted and mixed, continue heating in the microwave at 15-second intervals. Add vanilla extract and stir until smooth. Now add the mini marshmallows and the nuts, stir gently to combine.
Press the dulce de leche into the prepared container. Refrigerate until ready to serve. Use the aluminum foil to remove the dulce de leche from the pan and cut it into bite-sized pieces, then serve.
