This easy taco salad is crunchy, crisp and colorful! It’s a lot of fun to prepare because you can customize the ingredients, making everyone at the table happy!
1 pound of lean ground beef
1 package of taco seasoning or homemade
1 cup black beans, drained and rinsed
6 cups chopped romaine or iceberg lettuce
1 cup of chopped tomatoes
1 cup grated cheddar cheese
1 avocado cut in cubes
1 cup of tortillas
½ cup of sauce
½ cup of sour cream
dressings such as olives, peppers, jalapeños, red or green onions.
Brown the meat over medium heat until there is no pink left. Drain the fat.
Add taco seasoning and ½ cup water. Simmer 5 minutes or until thickened. Add beans.
Place lettuce in a large bowl. Cover with meat, tomatoes, cheese, avocado and desired ingredients.
Cover each serving with tortilla chips, salsa and sour cream.
While we use sour cream and sauce as dressing, Catalina or Thousand Island are also very good with this salad.
