Funfetti’s short bread bites are the perfect gift for the holidays! Only five ingredients, delicious and totally festive.
2 sticks 1 cup salted butter, cooled and diced
2/3 cup of white sugar
1/2 teaspoon almond extract
2 1/4 cups of all-purpose flour
3 tablespoons of divided sparks (any color)
Grease a 13×9″ baking tray and line it with parchment paper.
Cream butter and sugar in an electric mixer until combined.
Add almond extract and stir until incorporated.
Add the flour and mix until combined.
Fold in 2 and 1/2 tablespoons of sprinkle.
Press the dough into the prepared baking dish.
Sprinkle the rest of the sprinkles on top (feel free to add more than the remaining 1/2 tablespoon).
Gently press the top and let it cool in the refrigerator for 20 to 30 minutes.
Preheat the oven to 350 degrees F.
Remove the cold dough from the plate and cut it into 1/2″ squares.
Transfer 1/3 of the squares to a parchment lined baking sheet and bake for 8 to 12 minutes while keeping the remaining squares refrigerated until ready to bake.
Repeat the baking process with the remaining squares and let them cool on the baking sheet.
Cool completely before storing in an airtight container.
