Granny Cake

Grandma’s Cake 5 We love all the cakes our grandma made for us, but if we had to (haaaad TO) choose our favorites, this one, lovingly called simply “Grandma’s Cake”, would be our best choice. It always turns out perfect (never, ever dries out) and has tons of great taste and texture that keeps it interesting and keeps everyone else coming back for more. This kind of cake looks like coffee cake, but it’s so much more than that, trust us…

So for starters, you’re going to make a classic white cake in which you’re going to mix a can of crushed pineapple. The pineapple, along with the juices, adds a subtle sweetness, without being overwhelming; this is not a pineapple cake, it’s a granny cake. Once the cake mix is ready, you pour it into the baking dish and then cover it with a layer of nuts and brown sugar. It may look like a lot of sugar, and, okay, you can reduce it a little bit if necessary, but the sugar covers the nuts and then everything is caramelized in the oven and you have a layer of perfectly candied walnuts that gives you just the crunch you need, and balances the white cake loaded with pineapple.

The cake itself isn’t the only amazing thing about this recipe, although no, there’s more to it than that. While the cake is baking, a quick glaze is made and poured over the cake just after it comes out of the oven.
It’s joined with four ingredients, then soaked in the cake, another reason it stays so moist, and then slowly settles into a crisp top layer that balances everything out. Grandma’s Cake 9 The name may sound simple, but this cake is just the opposite. You’re going to be as obsessed with it as we were (and still are), and pretty soon it’s going to be a tradition in your house too!

Ingredients

1 1/2 c of sugar
2 c flour
1/2 teaspoon salt
2 eggs
1 teaspoon baking soda
1 large (20 ounces) can crushed pineapple in its own juice (including juice)
1 c brown sugar
1 c chopped walnuts
1 c evaporated milk
1/2 c sugar
1 bar of margarine
1 teaspoon vanilla

Addresses

Mix the sugar, flour, salt, soda, eggs and pineapple and pour into a 9 x 13″ container. Sprinkle the top with one cup of brown sugar and one cup of chopped nuts. Bake at 350 degrees for 45 minutes.

Cook the following ingredients until the mixture comes to a boil:

1 c. evaporated milk, 1/2 c. sugar, 1 stick of margarine and the teaspoon of vanilla.

AFTER BAKING THE CAKE AND REMOVING IT FROM THE OVEN, pour the cooked milk mixture over the entire cake. This is so delicious!

It must be kept refrigerated. This cake freezes very well.
