This recipe is perfect for a 9×13 casserole. The ones with lids are very useful if you take this dish somewhere. I use the disposable pans for the one I put in the freezer. T

Ingredients:

2 pounds of frozen potatoes, Southern style.
2 cups of grated cheddar cheese
1/2 teaspoon salt and pepper
1 cup of frozen peas and carrots
1/2 cup sweet summer corn, canned
2 C sour cream or plain yoghurt
1 can of cream of chicken soup
1/3 cup of milk
3 cups of cooked and shredded roasted chicken
Bread crumbs or cornflakes

Instructions:

Heat the oven to 400 degrees. Place potatoes on a 9 by 13 inch tray. In a large bowl, mix remaining ingredients except bread crumbs. Layer the mixture over the potatoes. Sprinkle crumbs on top. Bake for 1 hour or until top is golden brown.
