Hawaiian Wedding Cake with Whipped Cream-Cream Cheese Frosting

Pineapples give a unique flavor to the cakes, it’s the perfect dessert. This cake is a must, you can serve it with or without the icing. Watch how it’s done.

Ingredients:

1 cup of white sugar
1/2 cup of brown sugar
1 teaspoon baking soda
2 cups of all-purpose flour
2 eggs
A 20 ounce can of crushed pineapple with juice
1 cup finely chopped (or crushed) nuts
3/4 cup coconut flakes
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon of salt
1 teaspoon vanilla

Instructions:

Mix all dry ingredients in a bowl.
Then, mix the eggs, vanilla and crushed pineapple with all the juice.
Pour into a well-oiled pan 9″ round or 9″X13″ rectangle
Bake for about 35 – 40 minutes at 350 degrees (or until the center stick comes out clean). You can serve it this way if you like… or you can give it a boost with a simple whipped cream glaze!

For the Whipped Cream Cheese Frosting you will need
1 package (8 ounces) of cream cheese (leave it at room temperature to blend more easily)
1 cup of white sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups heavy whipped cream
In a small bowl whip the cream until stiff peaks form; set aside. In a large bowl combine the cream cheese, sugar, salt and vanilla. Beat until smooth.
Gently fold in the cream cheese and whipped cream mixture.
I covered mine with some toasted coconut.
