HEALTHY NO-BAKE SAMOAS COOKIES

A simple, unbaked alternative to your favorite Samoan Girl Scout cookies with only 4 ingredients.

Ingredients

1 cup Medjool dates, pitted
1 cup of grated coconut without sugar.
1/3 cup of mini chocolate chips
1/2 teaspoon coconut oil

Instructions

Line a small baking tray with parchment paper and set it aside.
Toast the coconut by preheating the oven to 400 degrees F. Place the coconut in a rimmed baking pan and toast until golden brown, about 5-10 minutes. Alternatively, add grated coconut to a pan and heat over medium heat until golden brown.
Make your own cookie dough: Process dates and roasted coconut in a food processor to form a sticky dough.
Using one tablespoon of dough, make balls with the palms of your hands, then flatten them into thick discs. Place the flattened cookies in the prepared baking pan.
Using the small end of a spoon, the end of a toothpick, or a straw, poke holes in the center of the cookies and shape them into discs as needed.
Place the baking sheet in the freezer so the cookies can harden.
Add the chocolate chips and coconut oil in a small microwave-safe bowl. Heat in the microwave in 15-second increments until the chocolate melts, making sure to stir to prevent burning.
Remove the mold from the freezer and dip the bottom of the cookies into the melted chocolate, placing them back on the parchment.
Once all the cookies have been dipped, add the remaining chocolate to a small plastic bag and cut off a small corner of the bag. Sprinkle the remaining chocolate over the cookies.
Put the mold with the biscuits back in the freezer until the chocolate hardens.
Store the cookies in an airtight container (separated by a layer of wax or parchment paper, if necessary, to prevent sticking) in the refrigerator.

Recipe Notes

If your Medjool dates are fresh, just remove the pits. If they are older and a little dry, you can soak them in hot water for a few minutes to soften them up. Be sure to drain completely and dry with a paper towel to remove any excess water.
My dates were on the big side, so it took me about 10 to get a cup. If your dates are smaller, you may need a few more to match a cup.

I prefer the taste and texture of the cookies after taking them out of the fridge and keeping them at room temperature for a few minutes.
