HONEY BBQ MEATBALLS

Honey barbecue meatballs are made from ground pork and covered with a sweet honey barbecue sauce. You won’t wonder where the meat is in this tasty variation of a traditional meatball recipe. If you like meatballs, be sure to try my bacon cheeseburger meatballs. Of course, if you have to put half the meat in your meatballs, I cover you with a more standard pork and beef meatball recipe.

Ingredients

2 pounds of ground pork
1 large egg, beaten
1/2 cup grated Parmesan cheese
2 tablespoons flat-leaf parsley, chopped
2 teaspoons of salt
1/2 teaspoon black pepper
1/2 cup of milk
1/2 cup of fine dry bread crumbs
2 cloves of garlic, minced
1/4 cup onion, finely chopped
1 cup of barbecue sauce
1/3 cup of honey
1/3 cup of grape jelly

Instructions

Preheat the oven to 350°F.
In a large bowl, combine ground pork, beaten egg, cheese, parsley, salt and pepper. Mix everything until well blended.
In a medium bowl, combine milk, bread crumbs, garlic and onion.
Add the milk mixture to the meat mixture, being careful not to overload the ingredients.
Form meatballs to the desired size, greasing hands before starting to prevent the meat from sticking, and place in an 8×8 greased skillet.
Place in a preheated oven and roast for about 15 minutes (or until the meatballs are crisp on the outside).
In a medium bowl, combine barbecue sauce, honey and grape jelly.
Pour sauce over cooked meatballs. Cover plate with foil and return to oven to bake for an additional 15 minutes (or until meatballs are cooked to – 165°F on a meat thermometer).
