HUMMINGBIRD BREAD

INSTRUCTIONS

Baking:
Preheat oven to 350 degrees and grease two 8×4 loaf pans with cooking spray.
In a large bowl, combine the flour, baking soda, cinnamon, and salt and whisk until combined
With a stand mixer, beat butter and sugar until creamy and fluffy
Stir in the eggs and vanilla
Gradually incorporate the dry ingredients and mix until combined. The dough will start to become very dry and crumbly.
Add the pineapple, coconut and walnuts and mix until just combined.
Add the mashed bananas
Pour the batter into loaf pans and bake for 35-40 minutes or until a toothpick or knife comes out clean
Let stand on a wire rack to cool completely

The topping:
With a stand mixer, combine all ingredients except the walnuts and mix until light and fluffy
With a rubber spatula, spoon some of the cream cheese frosting onto a cooled loaf and spread it out
Sprinkle with some chopped walnuts
Enjoy!
