Lemon Raspberry Scones

INGREDIENTS

  • 1 cup of thick cream
  • 8 tablespoons of butter
  • 2 cups of plain flour
  • 6 tablespoons of granulated sugar
  • 1 tablespoon of baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • Zest from one medium lemon
  • ½ cup of fresh raspberries

INSTRUCTIONS

  1. Begin by preheating your oven to 400 degrees Fahrenheit and lining a baking sheet with parchment paper.
  2. Place 1 cup of thick cream in the freezer for approximately 10-15 minutes to chill.
  3. Melt 8 tablespoons of butter in a microwave-safe bowl, then allow it to cool.
  4. In a medium-sized mixing bowl, combine the plain flour, baking powder, baking soda, granulated sugar, lemon zest, and salt, whisking them together thoroughly.
  5. Stir the chilled thick cream into the melted butter until small clumps of butter form.
  6. Add the butter and cream mixture to the dry ingredients, stirring until the flour is fully incorporated.
  7. Gently break the fresh raspberries in half and sprinkle them evenly over the batter, lightly mixing them in.
  8. Using a spoon or scoop, portion out mounds of the batter onto the prepared baking sheet, then place the sheet in the refrigerator for at least 15 minutes to firm up.
  9. Bake the scones in the preheated oven for 18-22 minutes, or until they turn a lovely golden brown.
