MEXICAN PIZZA

Pizza Mexicana – a homemade version of Taco Bell’s famous Mexican Pizza, only better! Super easy and a fun dinner that the whole family will love.

INGREDIENTS

1 pound of ground meat
1 package of taco seasoning
3/4 cup water
1 can (15 ounces) of refried beans
1 can (10 oz) of enchilada sauce
1/4 cup diced tomatoes
1 1/2 cups grated Colby Jack cheese
8 flour tortillas, taco size
1 Tbls of vegetable oil

INSTRUCTIONS

Preheat the oven to 400 degrees.
In a large frying pan, brown the ground meat, breaking it into small pieces. Once cooked, add the taco seasoning and water. Bring to a boil, reduce heat and simmer until most of the liquid is absorbed.
In a large skillet or griddle, pour half of the oil into the pan. Heat over medium-high heat. Add the tortillas and cook for 4-5 minutes, turning frequently, until crisp. Repeat with remaining tortillas and oil.
Spread about 1/4 cup of beans evenly over the bottom of each tortilla. Cover with taco meat.
Place another tortilla on top of the meat. Spread about 2 tablespoons of enchilada sauce evenly over the tortilla. Divide tomatoes evenly over top of tortillas.
Sprinkle cheese in an even layer on top.
Place each pizza on a baking sheet and bake for 8 to 10 minutes until the cheese melts and everything is warm.
Cut and serve.

NOTES

You can use less or more of all the ingredients. Keep covered leftovers in the refrigerator.
