MINT CHOCOLATE CHIP SNOWBALL COOKIES

Melt in your mouth Mint, chocolate chips, snowballs… Cookies are a gift you can’t resist! So easy to make and full of mint and chocolate flavour… no one can eat just one! Perfect for St. Patrick’s Day, Easter, Christmas and more!

Ingredients

1 cup unsalted butter softened
⅔ cup of sifted powdered sugar
2¼ cup of all-purpose flour spooned and leveled
½ teaspoon salt
1 teaspoon of mint extract
green food coloring
¾ cup of mini chocolate chips
additional powdered sugar for coating

Instructions

Line a large cookie sheet with parchment paper and set it aside.
Beat the butter and powdered sugar until light and fluffy.
Mix the flour, salt and extract until combined.
Add the green color of the food a few drops at a time until the desired color is achieved.
Add the mini chocolate chips.
Take out one spoonful of dough at a time and form a ball. Place the balls on the prepared cookie sheet.
Refrigerate the dough, covered, for at least 30 minutes.
Preheat the oven to 375 degrees.
Bake the cookies for 7 or 8 minutes. You don’t want the cookies to brown more than slightly on the bottom. Allow to cool for 5 minutes on the cookie sheet.
Line another large baking sheet with parchment paper and sprinkle liberally with powdered sugar. Place the slightly cooled cookies on this baking sheet and sprinkle them with additional powdered sugar.
Allow the cookies to cool completely.
Fill a small bowl halfway through with powdered sugar. Drop the cookies one at a time into the bowl and turn them over until they are covered with powdered sugar.
Store leftovers in an airtight container for up to four days.
