NO BAKE CHOCOLATE PEANUT BUTTER MINI CHEESECAKE

INGREDIENTS

GRAHAM CRACKER CRUST
1 cup graham cracker crumbs
4 tablespoons of melted butter
CHOCOLATE CHEESECAKE FILLING
10 ounces of chopped semi-sweet chocolate.
1.5 cup heavy cream, at room temperature
12 ounces cream cheese, softened
1/2 cup of powdered sugar
1/2 teaspoon vanilla extract
PEANUT BUTTER CHEESECAKE FILLING
4 ounces cream cheese, softened
1/2 cup of powdered sugar
2/3 cup of peanut butter
2/3 cup heavy cream
1/2 teaspoon vanilla extract
CHOCOLATE COATING
6 ounces of chopped semi-sweet chocolate.
6 tablespoons heavy cream, at room temperature
1/4 teaspoon oil
SPRINKLE
Mini Chocolate Chips
Peanuts – chopped

INSTRUCTIONS

GRAHAM CRUSTIC CRACKERS – Prepare 12 larger baking paper cups (I used 2.55 inches in diameter and 2.15 inches in height) or a mini spring-loaded tray. Put the graham crackers in the food processor until they are finely shredded.
Add the melted butter and stir well. Spread evenly on the paper baking cups and press down with a solid object, such as a cup, to make a solid layer. Set aside.
CHOCOLATE CHEESE LID FILLING – Melt chocolate according to package directions. Add heavy cream and mix well. Set aside.
In a medium bowl mix the cream cheese and powdered sugar with an electric hand blender, at minimum speed, for one minute.
Add the vanilla extract and the melted chocolate and mix until well combined. Spread evenly over the layer of graham crackers, with a spoon.
Leave it in the fridge to cool down.
CHEESE FILLING WITH PEANUT BUTTER – In a medium bowl mix the cream cheese and powdered sugar with an electric mixer at minimum speed, add the vanilla extract, peanut butter and heavy cream.
Mix until obtaining a fine and smooth mixture. Take the cheesecake out of the refrigerator and spread it evenly over the chocolate cheesecake filling.
Put it in the fridge.
CHOCOLATE TOPPING – Melt the chocolate according to the instructions on the package. Add the heavy cream and oil and stir well.
Remove the cheesecake from the fridge. Pour the chocolate topping over the cheesecake with a spoon.
Sprinkle with chopped peanuts and mini chocolate chips.

NOTES

Leave it in the fridge overnight.
