In a medium bowl, mix crushed graham crackers, granulated sugar and melted butter until well combined.
Press mixture into a 9 X 9 baking dish and set aside.
Pineapple Filling Instructions
Using a stand mixer, beat the cream cheese until smooth and creamy. Gradually mix the powdered sugar until well combined.
Mix into the cold shake and beat until fluffy. With a spatula, add the crushed pineapple.
Put the filling on the crust and smooth it with an angle spatula until it is uniform.
Instructions for the pineapple filling
In a medium bowl, combine Cool Whip, pineapple extract and yellow food coloring. Mix until combined.
Using an angle spatula, spread the topping evenly over the pineapple filling. Sprinkle with toasted coconut and pineapple chunks.
Refrigerate overnight to allow pineapple dessert to harden.
