Oatmeal Raisin Cookies

Oatmeal and raisin cookies are so easy to make and are served with a tall glass of cold milk. They are soft and chewy and filled with oats, raisins and a touch of cinnamon.

Ingredients

2 ½ cups quick-cooking oats
1 ½ cups of all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup butter at room temperature
1 cup of packed brown sugar
½ cup granulated sugar
2 eggs
1 tablespoon of deluxe molasses
2 teaspoons vanilla extract
2 cups of raisins

Instructions

Preheat the oven to 350°F. Prepare cookie sheets with parchment paper.
Combine oats, flour, baking soda, salt, and cinnamon in a bowl. Set aside.
Cream butter, brown sugar and white sugar until fluffy.
Add the eggs, molasses and vanilla. Beat until smooth.
Gradually add the oatmeal mixture to the cream. Add the raisins.
Put a spoonful of ½ on the prepared cookie sheets.
Bake for 8 to 10 minutes or until lightly browned at the edges.
Cool for 2 minutes, then transfer cookies to wire rack to cool completely
