Orange Creamsicle Cookies

Orange ice cream cookies are butter cookies made with orange peel and added food coloring to remind you of an orange ice cream treat.

INGREDIENTS

CREAMER RECIPE
1/2 cup (1 stick or 113g) salted butter, softened
1 package (8 oz.) cream cheese, softened
1 teaspoon fresh orange peel
1 1/2 cups (300g) granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon orange extract, (you can start with 1/2 teaspoon and try the dough)
1 drop of red food coloring (add more depending on how dark you want the orange to be)
2 drops of yellow food coloring (add more depending on how dark you want orange to be)
2 1/4 cups (282 g) all-purpose flour
2 teaspoons baking powder
1 cup (126g) confectioner’s sugar, divided

INSTRUCTIONS

Preheat the oven to 350°F.
In a large bowl using a hand mixer, beat the butter, cream cheese, orange peel, and granulated sugar until blended.
Add the egg, vanilla, orange extract, and red and yellow food coloring.
Add the flour, baking powder and half a cup of confectioners’ sugar. Using a low-temperature mixer, gradually beat until smooth.
Using a 2 tablespoon cookie spoon, create balls and roll them in the remaining sugar.
Place them on a parchment-lined baking sheet. Using your hands or the bottom of a drinking glass, flatten the balls into rounds. Place approximately 6 dumplings on each sheet.
Bake until no longer wet on top, 8 to 11 minutes. After about 5 minutes of cooling in the pan (they will be soft), place them on cooling racks to cool completely.
