Oreo Cheesecake Chocolate Cake

Oreo Cheesecake, a decadent chocolate cake recipe Oreo cheesecake between two layers of soft, rich and spongy chocolate cake.

Ingredients

For the chocolate cake:
2 cups of sugar
1-3/4 cups of all-purpose flour
3/4 cup of cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon of salt
2 eggs
1 cup of milk
1/2 cup of vegetable oil
2 teaspoons vanilla extract
1 cup of boiling water

For the filling of unbaked Oreo cheese cake:
1 1/2 cups heavy whipped cream
8 ounces. Smooth cream with cheese
3/4 cup of powdered sugar
12 Oreo cookies – roughly crushed

For the milk chocolate ganache:
8 oz. milk chocolate – finely chopped
1 cup of heavy whipped cream

To decorate:
1/2 cup chocolate chips
3/4 cup of whipped cream

Instructions

To make the cake:
Preheat the oven to 350°F and grease two 9-inch round pans and line the bottom with parchment paper.
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt.
Add the eggs, milk, oil and vanilla and mix at medium speed for 2 minutes.
Add boiling water and mix until smooth.
Divide the dough into 2 prepared pans and bake for 30 to 35 minutes or until the toothpick inserted in the center comes out clean.
Cool for 10 minutes in the pans, then remove from the pans to the reverse wire racks (this flattens the domed cakes) and cool completely.

To make the filling:
In a large bowl mix the whipped cream until firm peaks form.
In another bowl mix the cream cheese and sugar until smooth.
Combine the cream cheese and whipped cream and add the crushed Oreo.

To make the ganache:
In a sauce pan over low heat, melt the chopped milk chocolate, remove from heat and add the heavy cream. Stir until smooth and pour it over the cake (if it is too liquid, cool it a little until the ganache thickens but is still thin enough to drip down the sides of the cake).

To assemble the cake:
Spread the filling on the bottom layer of the cooled cake, carefully place the second layer over the filling, and then spoon the chocolate ganache over the cake. Garnish with chocolate chips and whipped cream if desired.
