Peanut Butter Snowballs

INGREDIENTS

2 c. powdered sugar
1 1/3 c. creamy peanut butter
1/4 c. butter, melted
2/3 c. graham cracker crumbs
1 tablespoon of maple syrup
1 teaspoon kosher salt
2 c. white chocolate, melted
2 teaspoons of coconut oil
Sparks, to decorate…

DIRECTIONS

Line a medium sized oven sheet with parchment paper. In a large bowl, combine the powdered sugar, peanut butter, butter, graham cracker crumbs, maple syrup and salt. Using a whisk or hand blender, mix the ingredients until smooth and fully incorporated.
With a small cookie spoon, form balls with the mixture and place them on a baking sheet.
In a medium bowl, combine melted white chocolate and coconut oil and stir until smooth. Dip the peanut butter balls in the white chocolate and place them on the cooling rack (excess chocolate will fall off).
Cover with sprinkles and then refrigerate until ready, about 10 minutes.
