Ingredients

1 pound of lean ground beef
2 tablespoons of butter
1 small yellow onion… chopped
1 small green pepper, diced
8 ounces of chopped brown mushrooms
2 tablespoons ketchup
1? tablespoons Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1? tablespoons of cornstarch
1? cups of meat broth
8? ounces of sliced Provolone cheese (use 6 ounces if you don’t want it too cheesy)
6 brioche burger buns
United States Custom – Metric

Instructions

Add the ground meat to a large cast-iron pan (it browns very well) and brown until a deep brown crust appears before separating the meat.
Stir the ground meat and brown it until a deep crust appears on about 50 percent of the meat.
Remove the meat (you can leave the fat behind) and add the butter and onions and the peppers and mushrooms.
Allow to brown for 1-2 minutes before stirring, then allow to brown for another 1-2 minutes before stirring again.

Add the meat back to the pan.
In a small cup, mix the meat stock and cornstarch.
Add the ketchup, Worcestershire sauce, salt, black pepper, meat broth and cornstarch mixture to the pan.
Cook until mixture is only slightly liquid (about 75% of the mixture is above liquid), 3-5 minutes.

Turn off the heat, add the provolone cheese.
Serve on toasted brioche rolls.
