Slow Cooker Hamburger Stew recipe

Ingredients:

  • 1 lb (450g) lean ground beef
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain off any excess fat.
  2. Transfer the cooked ground beef to the slow cooker.
  3. Add the beef broth, diced potatoes, carrots, celery, onion, minced garlic, diced tomatoes (with their juices), Worcestershire sauce, dried thyme, dried rosemary, and dried parsley to the slow cooker. Stir to combine.
  4. Season the stew with salt and pepper to taste.
  5. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the vegetables are tender.
  6. If you prefer a thicker stew, about 30 minutes before serving, mix the cornstarch with water in a small bowl to make a slurry. Stir the slurry into the stew, and continue cooking until the stew thickens slightly.
  7. Once the stew is ready, taste and adjust seasoning if needed.
  8. Serve the slow cooker hamburger stew hot, garnished with chopped fresh parsley if desired.
