Slow Cooker Lemon Chicken

I love this slow-cooking lemon chicken and I recommend you try it. It’s the perfect recipe if you’re a big fan of citrus.

By the time you eat this lemon chicken, it will be full of lovely citrus flavors. It will have a slight hint of sweetness from the brown sugar and a little more flavor from the herbs. It’s an excellent combination that will keep you coming back for seconds.

Ingredients

1kg (2.2 lb) chicken thigh
2 teaspoons garlic, crushed
½ tsp oregano
1 teaspoon of parsley
2 teaspoons of brown sugar
2 teaspoons lemon peel
3 tablespoons of lemon juice
250 ml of chicken broth
125ml (4.2 fl oz) of white wine

Thickener
2 tablespoons of cornstarch
2 tablespoons of water

Instructions

In a slow cooker, mix garlic, oregano, parsley, brown sugar, lemon peel, lemon juice, chicken broth and white wine.
Add the chicken thigh and cover with the liquid.
Simmer for 6 hours.
Remove chicken from slow cooker.
Mix the cornstarch and water until it becomes a paste.
Pour cornstarch mixture into crock pot and stir until blended.
Return chicken to crockpot.
Cook over high heat for 30 minutes or until sauce thickens.
Serve and enjoy.
Recipe Tips
White wine adds more flavor but can be omitted if you do not wish to use it.
You can use other chicken cuts such as chicken breast or chicken sticks.
I recommend using fresh lemon juice for the best results. However, bottled lemon juice will work well if you can’t get fresh lemons.
