SOUTHERN FRIED PORK CHOPS

Ingredient:
4 bone-in pork chops (think 1/2 inch)
1 cup all-purpose flour
1/2 cup canola or vegetable oil (enough to coat the bottom of the pan)
2 tablespoons butter
1 teaspoon seasoned salt (extra to season the chops to taste)
1 teaspoon black pepper (extra to season the chops to taste)
cayenne pepper to taste

Instructions:
Season both sides of the pork chops with salt and pepper.
Mix all dry ingredients. Dredge each side of the pork chops in the flour mixture then set aside on a plate. Or dredge before adding oil. (Less dishes)
Heat canola/vegetable oil over medium to medium heat.Add butter. When the butter melts and the butter-oil mixture is hot, cook 2 to 3 pork chops at a time, 4 to 5 minutes on the first side each. 3 to 5 minutes on the other side. (Make sure there are no pink juices left.) Remove to a paper towel-lined plate and repeat with remaining pork chops.
